According to the Danish Veterinary and Food Administration approximately 700,000 tons of food ends up in Danish trash cans each year. Two thirds originate from different places in the food business – the rest comes from Danish homes.

With this fact in mind, several companies within the food business have committed themselves to measure their food waste to reduce it by half before the end of 2030. According to the Danish Veterinary and Food Administration this initiative is in line with UN’s goal no. 12.3 regarding 50% global reduction of food waste.

In our experience, many Danish companies wish to back the achievement of this goal. But which tools are available to start well and safely and to ensure a solid and uniform procedure in connection with this task? And how can you document your efforts towards employees, clients, and your network?

STEP 1 | GAP ANALYSIS

To start well and create an overview, the obvious first step is a GAP analysis. In this way you get an overview of possible gaps and where you must and should make an effort. The GAP analysis is thus a tool to prepare a list of lacks and improvements. You can also call it a to-do-list.

If you want your efforts to end up in a Food Waste certification, the GAP analysis will often be the first step.
